Feel I hv reached my ripe old age to explore other "interests" n to allow my "mind" to rest n be free from being judged etc ...
The process of "creating" n exploring new recipes is my current "healthy hobby" too

Are you trying a LCHF diet without any meat?

Btw, you are dedicated. Unless i had guests, I would never go to so much trouble for just some rolls. Just eat my veg raw, stirfry quickly or pop into oven. Dips are yoghurt favoured with mint/lemonjuice, a good balsamic vinegar or just soya sauce with cut chillies.
Nope I DO have meat in my LCHF - love my Big English Breakfast dinners with bacon n chicken or fish curries with sweet potato n lots of brinjals okra

See also the Pate de Campagne or Country Pate (terrine) with bacon pork belly chicken liver brandy lots of herbs spices...currently my MOST "complicated n longest-time-taking recipe" attempted so far - actually the steps are pretty simple here just waiting time ...

Hard time finishing that pate by myself over several meals (with Venezuelan arepas flatbread from P.A.N. cornmeal flour - stuffed with avocado too) as mom only took 1 slice (n warmed up too as no cold food for her)

I hv all the time in the world now to "cook" when I want to since jobless n sleep late (after 2am) n if I want something more LCHF etc besides mom's usual Chinese items ...most of the time I skip the brown rice at dinner too ... only recently managed to convince mom to switch to using Coconut Oil instead of Canola Oil after the last of that is used up soon ...

Guess I enjoy the process itself now ....

Yes I used to stay away from crab sticks too like the plague until my friend's suggestion with mango spring rolls n until I used up the balance flavoured fried chewy crabstick mom had bought n was thinking of throwing away in my pre-CNY Crab Cream Cheese Korokke or Jap potato croquettes done with veg + with veg/corned beef too .... the corned beef used in my Columbian Beef Empanadas too (see Baking Thread) baked in cheapo halogen oven

But the reality is not so - as no job = no $$ ...Sighsss
But because of going LCHF need to research on Low Carb food n started exploring Recipes n Videos including the NON LCHF ones too
Yes did spend quite a bomb on spices etc alone (never got the pricey onion powder too) - my crazy Xmas Baking Urge saw me buying LOTS of different ingredients (some not used/hardly used with leftovers) ,-caused me to go off my LCHF too n that probably started just because I thought of using up some brandy we had on fruit cakes
Hmmmm LOTS more other stuff now to replace that bottle of brandy sighsssss

For LCHF on budget - eggs would be your best friend - egg yolks for choline (besides from chicken liver organ meats) to prevent fatty liver together with LOTS of green leafy veg (mom is now cutting down even on veg such as good bitter gourd as "too cooling" for her rheumatism as she remains unconvinced that apple cider vinegar/CCO/turmeric/etc will be good for inflammation - so as a result I suffer too ....)

To be HF - hard to take enough Bacon or Oils etc so simplest is Avocado besides Nuts ... so too I enjoy my curries with the CCO... doc says to eat chicken WITH the skin n butter n collagen-laden food like chicken feet n soups with lots of bones/ribs....to undo the harm brought on by the Cholsterol Myth ! To bake only at most once per week as too much processed stuff n sugars with most baking ....

I am lucky that my HbAc glucose level still within permitted range despite the Xmas Baking - probably due to the fact that I am doing natural Intermittent Fasting IF as I hv been skipping breakfasts for the last few years as jobless since retrenchment n wake up late some days as sleeping late after 2-3am (tho' late sleep interferes with good weight loss while LCHF as per Eric Berg : cortisol) - IF endorsed by Dr Jason Fung for health !

Must consider overall for the Roll
No rice as in typical sushi roll therefore Low Carb in that sense
Crab stick no doubt is processed fish meat with bad sugars starch msg ...but not taken in huge amounts or frequently
Moreover much more avocado in roll for the High Fat
So overall I will consider as being LCHF there

Doc says fruit sugars ok - can take 3 fruit servings per day
If strict LC then I will restrict to the low GI berries but ordinarily not doing strict LCHF as too marfun n inconvenient n will be "stressed" for nothing ...
Usually like to take my fruits with Greek Yoghurt
Anyway papaya has got lots of good stuff too ...

Also must consider that I am also eating food/dishes prepared by mom too that might be Non LCHF (but will skip the brown rice most meals) - in addition to those LC or Non-LC items that I might be doing now & then ....
Important thing is that I am making good attempts at More Healthy Eating hopefully more-consistent LCHF as I feel that to be the Best - better than the Atkins Diet - From my reading LCHF works but problem with me is I will still hv to go for sinful stuff on Cheat Meals
Anyway must not stress on this LCHF as long as got try bah....

Going to do my Spring Rolls now for our 4pm Tea !

Yum...my sinful crunchy Veg+Egg Spring Rolls - half baked n half fried for Tea !
Used up last egg to fry egg strips for filling + crunchy chestnuts etc ....
served with a simple Thai sweet chilli sauce from bottle
Mom very smart - finished up more than half of the fried ones leaving the baked ones to me !!!
Decided to keep the partial ingredients for the Ranch Dressing Bacon Pinwheels/Rolls for another day ....
(Went to check n realised I hv bottle of discounted CS Caesar Dressing but not Ranch Dressing - got mixed up here ...)

Got to finish up my Italian Salad greens with the yummy arugula or rocket etc for dinner tonight as will not keep further...

TIP : get the $3+ box from NTUC - from Italy - so much better than those $5+ Vege round packs promoted by Pornsak or those Malaysian/Australian ones in plastic bags/boxes as these usually don't contain the more expensive arugula which I love for their nutty flavour !

TIP 2 : If at Cold Storage CS or Giant check on the Soon-to-Expiry Date Offers
May be possible to pick up some good 50% Off goodies - Salad Greens, Lemons, Frozen Veg or Berries etc

E.g. Can even get good cheap pomegranates from Sheng Shiong or some neighbourhood grocery stores ...

Dinner tonight with lots of leafy greens (simple Italian salad in balsamic vinegar + mushroom stir fry) n fatty luncheon pork meat [tho' processed meat] including yummy Pork Belly inside soup for dipping in black soy sauce {1 of my favourites}
very LCHF !!!
Followed with a serving of pomelo - but frankly too dried-out n not juicy as mom only bothered to peel it today after leaving it for days ...
Now relaxing with hot Hibiscus Tea

go try those big ntuc 3 for 6++ i think
that price range n size more from CS
NTUC's avocados usually within the $4-5 range for 3
EDIT : Tho' now after CNY in March the NTUC avocados seem to hv increased their pricing from below $5 to ABOVE $5 - to about $1.90 or more EACH with the bigger ones from CS going for $3+ each !!!!
The HAS avocados from Mexico are selling at $5.95 for 3 medium-large ones at NTUC currently as at 5 March 2017.
I managed to pick up 3 SMALL ones from CS at $4.99 packaging 3-4 weeks back or so.

But sometimes can get good offers from neighbourhood stalls too
E.g. got next to Simei MRT shops near Phoon Huat there (for much cheaper Heavy Cream n French Butter etc...)
