Aero+'s froth is dryer.
Aero3 is more fluid, closer to the froth made by conventional machines.

It's down to preference but most will prefer the result from aero3.

All Aeroccino stops at the same temp, anything higher than default will cause milk to solidify. Aroma from the milk is best at the default temp
