Processor specs are only relevant when you need it. For video editing in final cut, the dgpu will help greatly with render times. I also do Lightroom editing and the 6 core might have a slight edge over the 4 core, but I found that the mini got ridiculously hot, close to the max of 100 degrees. A quad core runs much cooler.

That said, if you really want to cut down duplicative set ups, get the mini, but if you feel that you are being bottlenecked for video editing, can always get an egpu subsequently. Just very expensive atm.
Wow! Serious? That is really hot.

This is my iMac setup. You can see there's a shelf above it so there will be space constraint.

Looks like I have to stick to my iMac 2017 27". I actually added RAM to it and extended AppleCare so I am unwilling to sell it. It's just that I will need a separate monitor just to hook up my windows laptop and this will eat up precious space.

I tried using Jump Desktop, which is actually a remote desktop connection.

It is surprisingly fast! Can be my temporary solution.

Depends on your usage balance between the three honestly. Which one do you need more than one display at a time? 5k Retina is pretty much unbeatable
