There are exceptions:

1) from scrapped cars
2) car owners who replace the entire set although only one/two tyres were spoilt
3) those who decide to change the rim sizes

the wideness of stock tyres is designed for the weight , power, center of gravity and braking capabilities for that particular car....

using thinner tyres means less grip means longer stopping time...
