Which way are you thinking of driving, and when? Pretty much the whole road down the coast has been burnt by the bushfire.

Botak probably isn't the right way to describe it. I think the whole road has only opened up again earlier this week, but fires are still currently burning in remote and inaccessible areas. Still plenty to see and do, but as long as you're aware of what's going on and that the scenery will be somewhat different from the usual.

Tasmania is an obvious choice, although there are plenty of outdoor and mountains in other states too. e.g. the Great Alpine Way in Victoria is a lovely drive, and so is The Alpine Way road through the mountains in NSW.

I have also done a campervan trip from the Gold Coast down to Sydney, not really following the coastal or inland route but switching between them via the mountains. It was great having a picnic with a view where there's nobody else around for at least 10km. A couple of days later, we set up camp at a creek where there's nobody else around. You could go for a dip (clothes optional?) and catch some trout for dinner. There are tons and tons of lovely and off-the-track places to explore.

I would stay away from touristy areas such as GOR if i had a campervan. One of the major advantages is being able to go places where people usually don't go, and camp out in places where nobody else would stay. Going to GOR would completely defeat these points.
