Basically don't give money to people who beg. Is ok to spend money buying stuff from them. I mean even you don't support by buying, they will still be there with less money and things won't be any better.
Taxi and tuktuk are tentatively safe. Tuktuk need to negotiate rates.
Food wise, similar to anywhere in the world. Just Ensure you eat cooked food and food that a lot locals eat.

Personal advice, don't bring white clothes, since as mentioned it's very dusty. Your clothes will end up yellowish.

For accommodation in SR, just stay within walking distance to Pub Street.

Then lastly for attractions in SR, if you want to take good pictures, you need to plan accordingly (e.g. time, order or visit) especially for sunrise. If you will just follow the advice of the tuk-tuk driver, you will end up joining loads of Chinese tour buses.

i agree.. the road is very dusty.. so i suggest taking an air-conditioned car instead of tuk tuk for long trips to the angkor wat and especially the tonle sap..
things there are expensive because payment is based on USD! so nego your prices properly..

take tuk tuk for airport transfer or day tour is not recommended ...
very dusty and very dangerous ...
people ride on their bike would just snatch away your bags ...

Sightseeing and relaxing.
Then are you having any expectations the sight-seeing should be like this or like that.

Just go with an open mind to experience.

Each individual has different likes and dislikes.

Sightseeing and relaxing.
Some want to sightsee at Angkor Wat yet do not consider it relaxing because of the full day under the sun.

Siem Reap is definitely worth the trip, the Anchor Wat complex is one a kind and is definitely a must see. But if you will visit, you need to go with an open mind since it's a very touristy, crowded, dusty and hot especially during summer.

For Phnom Penh, you can skip it.

only been to Siem Reap and angkor wat is definitely worth the trip. Go temple hopping and you will be surprised to see how different each temple is...
the weather is super hot though, and lots of stairs climbing and walking.. not recommended for elderly because the stairs can be really steep..

Too much stairs climbing seem quite challenging to me.

You need not climb. Most of the sites in the Angkor Wat complex do not require climbing. You can admire the structures from the ground.
