May not be the best ramen but i think their egg is arguably the best in Singapore.

I think Marutama Ramen is likely a “either you love it or hate it” kind of ramen but i do learnt to appreciate this for it’s unique soup broth and a different style of noodle, and definitely loving the egg.

which ones of its ramen did u tried..? i see they got weird ones like clams... seafood... prawns & corn.... and they have miso based... and kimchi (??? isn't that like korean??) soup based... i tot the traditional ramen specialists usually eat with charshu only... and soup base is like pork... miso... or soya... so i went with the most standard tonkatsu charshu ramen... :o

juz don't try any of the clams... or miso....

clams is unclean with sands..... miso is juz a very clear salty broth, hardly any miso taste.
for eggs, i was lucky to get a whole uncut version, so inside is still lava, if he serves u the already cut version, those were already cut halves and left in the fridge for unknown amount of time.

Coffeeshop ramen! Called Ninja Ramen, this is located in 24H Kopitiam in Siglap and initially when I saw the shop closed at midnight, I thought it's just a nice signboard with typical collagen ramen. When I came back at dinner time I realized alot of people were having it so I tried it. It's manned by a Singaporean (I saw one young guy when I ordered it).

$5 tonkotsu chashuu ramen, and it's a lot of chashuu for $5! The chashuu is extremely good too, those that melts in your mouth. Soup and noodles are acceptable, egg is lava egg. (That's already better than Kagetsu...)

tried this yest... pretty good... i like this one better than the kovan one... i think noodles... soup and char shu all better than kovan one... on the egg not runny enough and not as flavourful as the kovan one... and at $5 is really value for $$$... :)

wacky

Is the Ninja Ramen at this coffeeshop?

Tonkotsu Kazan Ramen @ Liang Court.

Tonkotsu Shio Ramen @ $16++ They don't have pure Tonkotsu broth option so kinda expected it to be lighter and less greasy. Did not managed to even finish half the soup, quite rare for me. The noodles used are the thinner kind which i prefer, but the texture is just not there, think it was undercooked. The pork belly is the saving grace here, thick, flavoursome & soft, total of 5 pieces! =:p

BTW i noticed their 'volcano ramen' is using thicker type of noodles, which might be a turn off for people like myself. The whole 'volcano' concept seems rather gimmicky, quite shocked to see burn marks on some of their staffs' upper limbs. Very poor thing leh, machim like slavery... :( :(

Actually, their volcano ramen is their speciality. The soup I think is much better than the bowl version. I really liked the default soup of the volcano ramen.
