Starchy food should make up just over a third of the food we eat. Choose higher-fibre, wholegrain varieties, such as wholewheat pasta and brown rice, or simply leave skins on potatoes.

I guess I can't imagine giving that kind of advice about 1/3 starches with a straight face. It requires more insulin and, for diabetics already prescribed insulin, they need even greater amounts. This is unsustainable.

It amazes me that so many RD clearly fail to help but do not question the advice they give. Truth is right there. Eat to dietary recomendations you gain weight. Eat LCHF you lose weight. Not hard to understand when you want to.

Doctors and Nurses are very smart people, they are trusted, we trust them with our children's lives at times. The message is very simple, eat whole fresh food from the farm, the sea and the orchard. Only now are ALL of us learning the damage junk food from factories has done.

Not all healthy food is expensive. Knowing how to cook cheaper cuts of meat and fish and making meals from eggs/cheese/veg is really helpful. The trouble is, many people want "healthy food" that comes in a plastic tray and goes in the microwave!

1/3 of my food as starch Eleanor? Why exactly? All it does is mess with my gut, makes me fat, binds to minerals, spikes my blood sugar and fuels cravings. There’s nothing I can’t get in starchy food that I can’t get elsewhere in better, less problematic foods.

I was waiting in a doctor's surgery 30 yrs ago and there was a poster on the wall. It was about heart health - fats to eat and not. Avocados and sat fats were to be avoided and margarine and vegetable oils were encouraged. This BS has to stop - we have to stop changing our minds.

I was prescribed insulin just over a year ago and I went into a mad research phase. It’s fascinating. I can honestly say that I’ve learnt more in the last year than I did during my entire PhD. I’m lucky the nurse practitioner is amazing and inciteful.

they have high cholesterol.
Those who are informed of the test, get it done themselves,
never offered as a standard part of testing.

So true! The guidelines do mention CAC but only as a tool
to find an increased risk and start stains. They completely fail to
mention the benefit of a zero score reducing risk and negating
the indication for a statin.
Subtle bias in guidelines easy to over look!

So many colleagues will comment that eggs, meat, full cream milk etc

When I ask why? say ‘Dr told me it will clog arteries’ or
‘causes heart disease’ few will doubt this ‘expert advise’

Furthermore, here's a case study involving a man with colorectal cancer.
When he stuck to the paleolithic ketogenic diet protocol (meat and fat),
the tumor regressed.
When he did not, the tumor progressed. He was not good about
following it, unfortunately.

He was right. Many cooks & chefs, esp. in India, treat vegetarians
with disdain and sarcasm. But as Bourdain showed in the
Punjab episode, this attitude is mainly out of ignorance,
a refusal to be curious, or excessive self-pride.
It's sad we'll never have a chef like him.

Folks were making traditional seafood paella on the beach &
he was giving her **** for not eating it. She eventually took a bite
& admitted it was delicious.

Quite big sized - $10 only for 3 groupers there !

Hmmm can go to the Seafood Marketplace aka Song Fish
at Century Square basement for more such cheaper frozen fish/seafood then ! I like that it's so close to Mahota too !!!
Their 1kg $5 Frozen Strawberries are really value for money !!! :D

Will be delivered next week !

Used an $8 Coupon too !
I feel the MCT Oils should be esp good for mom's dementia as quick absorption without going thru body processing etc ....

Well mom didnt return from the market with her advance ordered Pork Trotters - butcher n she on a merry dance ???
So we SHOULD be having Vinegared Pork Trotters for Sun Dinner now !!!

We shared a lowly cheap packet of Nasi Lemak n 2 small otaks at lunch
I went to augment with a fried egg each with some cherry tomatoes as felt it was just so pathetic !

The Happy Call Egg Pan freebie n 2 x 200g Nescafe Gold Blend all from Korea plus the Ginger Shampoos were delivered today - found the Nescafe Gold 3-in-1 sticks more fragrant over these soluble granules but the Happy Call pan really solid !

Only to hv mom screaming away at me to go cook our lunch ????!!???

Got up finally about 1pm to find she DIDN'T bring any 'ordered' Pork Trotters home - trust her n the mad butcher !!!!! Sighsss.....Again NO Vinegar Pork Trotters !!!!!

But she DID remember to get the requested 3 items for the Dumplings which I'll do up later for tomorrow after the Red Vinegar has been delivered - told mom to tarpau Tze Char Yee Mee or Sarng Meen Noodles for tonight !

So I opened ceremony on the 16cm Happy Call Frying Pan to fry up the 4 eggs n used my other bigger nonstick skillet for the Danish Bacon Mushrooms Cherry Tomatoes n Jalapeno Peppers
N washed up some Italian Arugula !

Tada our late healthy LCHF Big English Breakfast lunch eaten at 1.30 pm !!!

So disappointed as AGAIN mom forgot all about the 'ordered?' Pork Trotters - butcher also one kind how come he didn't remind mom about it when she bought the $3 Minced Pork I wanted for my Shanghai Dumplings for Mon ???

Discovered that mom bought only 300g worth of loose fresh wanton skin/wrappers from the wet market
- which was only 12 miserly wrappers !
I usually buy the packed sturdier Shanghai Dumpling wrappers with 28 there

So ended up
- only about half of the meat mixture was used up
that half with the extra shrimp added in too
So will need to do Pork Meatballs with the balance there
Still waiting for my Red Vinegar to be delivered - to make the Dip/Sauce
otherwise will use the usual Black Vinegar



Since these were more like wanton wrappers
I didn't do any pleating as these were stuffed to the hilt with the shrimp-pork mixture - leaving very little 'sealing edge' for meaningful pleating

This is my usual style of pleating my Shanghai Dumplings/Gyoza


Prep Time: 30 mins
Cook Time: 30 mins
Total Time: 60 mins (inc. marinating time)
Serves: 52 pieces

Ingredients:

1 pkg gyoza wrappers (1 pkg = 52 sheets) (See Notes for homemade recipe)
1 Tbsp neutral flavor oil (vegetable, canola, etc) (for frying each batch of gyoza)
¼ cup water (for frying each batch of gyoza)
1 tsp sesame oil (for frying each batch of gyoza)

Filling:

¾ lb ground pork (¾ lb = 340 g)
2-3 leaves cabbage (2-3 leaves = 140 g or 5 oz)
2 green onion/scallion (2 green onion = 15 g or 0.5 oz)
2 shiitake mushrooms
1 clove garlic (minced)
1 inch ginger (1" = 2.5 cm) (fresh, grated)

Seasonings:

1 tsp sake
1 tsp sesame oil
1 tsp soy sauce
¼ tsp Kosher salt
Freshly ground black pepper

Dipping Sauce:

1 Tbsp rice vinegar [I use Black Vinegar+Soy Sauce+Grated Ginger/strips]
1 Tbsp soy sauce
⅛ tsp la-yu (Japanese chili oil) (optional)

In the end I braised (rather than fried) the Noodles with the Dried Shitake strips together with the 2 Soy Sauces n some Oyster Sauce too + dried scallops cilantro etc
Served with the blanched Green Veg + lots of yummy fragrant Garlic Oil garnish + Prawn-Pork Chestnut Dumplings in Soup too
Mom said this meal passed with flying colours
- my dumplings were so much more yummier n crispy etc
- she said 1 roll noodle for each pax was too much as 1.5 rolls for 2 was better but told her these were the last 2 rolls in that 1st pack of Shrimp Noodles
(Still hv a 2nd unopened 2nd Pack)

A MAN who reversed his Type 2 Diabetes is pledging to change the way treatment of the disease is handled across the country.

Mark Hancock, from Horndean, used a ‘low-carb, real food’ approach to his diet – one which a diabetes consultant at QA Hospital said is being discussed nationally.

One week after starting the diet 47-year-old Mark said he was able to stop taking medication to reduce his blood sugar levels.

He has been asked to speak in parliament about the way he manages his condition, with the aim of changing the national guidelines about the disease.

Mark, a dad-of-two, said: ‘Current advice is centred around eating starchy carbohydrates and sugar, but it should focus on healthy fats and real food, like meat and vegetables.

‘I was diagnosed with Type 2 Diabetes in 2010. I was 16 stone and didn’t eat particularly well, but I was still devastated when I was diagnosed.

‘Six years later I heard TV doctor Michael Mosley saying diabetics shouldn’t be basing meals on starchy carbohydrates, as that makes the condition worse and will result in the need for more medication.’

Both Type 1 and Type 2 Diabetes are associated with having higher-than-normal blood sugar levels. Type 2 is often diagnosed in people with excess body weight, and in those aged 30 and over. Type 1 is often diagnosed in childhood and isn’t associated with obesity.

Mark purchased Dr Mosley’s eight-week blood sugar diet recipe book in 2016, and now says he feels as fit as he did as a teenager.

Mark added: ‘Dr Mosley promotes eating real foods and healthy fats found in yoghurt, oily fish and so on, and taking out bread, pasta, and potatoes from the diet, plus sugary products.

'My blood sugar levels were high, and fell back into the normal range within one week.

'I want people with Type 2 Diabetes to know they don’t have to face a life of medication.

‘We need to change the advice GPs and nurses are giving out to patients, who can reverse the disease themselves, like I did, through diet.’

Mark will speak in parliament on June 27, along with two doctors and a nurse.

Partha Kar is a diabetes consultant at QA Hospital. He said: ‘Type 2 Diabetes is known as a progressive disease but more research shows in some cases it’s reversible. The low-carb, real food approach is an option, but not the panacea, as it needs to fit in with the individual.

'People with diabetes can either reduce the amount of calories they have or the amount of carbs. With low-calorie diets there’s very good scientific evidence which shows a person with Type 2 Diabetes can be put into remission having been on one. The low-carb, real food approach looks promiseable – it’s being looked at on a national basis.’

The Western world, along with an increasing fraction of the rest of the world, is facing a health crisis. With a combined overweight and obesity rate of 80%, epidemics of diabetes and depression, and heart disease and cancer as the most important causes of death, understanding the roots of our problem is critical. To avoid becoming a health statistic, understand the number one cause of chronic disease.

Diseases of Civilization

The diseases of civilization are those that people living in civilization get, and that people living a primitive or hunter-gatherer lifestyle do not get. They include:

-coronary heart disease
-obesity
-hypertension
-type 2 diabetes
-cancer
-autoimmune disease
osteoporosis

These diseases are “rare or virtually absent in hunter–gatherers and other non-westernized populations”.

We could add a few others to that list:

-depression
-sarcopenia
-ADHD
-male hypogonadism (low testosterone and erectile dysfunction).

A huge fraction of Americans live with chronic disease

The diseases of civilization are chronic diseases, and a large number of Americans have them.

According to the Center for Disease Control (CDC), 78% of Americans 55 years and older have chronic diseases.

These diseases include arthritis, asthma, cancer, cardiovascular disease, COPD, and diabetes.

For Americans age 55 to 64, the percentage that have a chronic disease is 70%.

For Americans 65 and over, the percentage is 86%.

Much of this is avoidable.

Much of this is correctable too.

The top 1% have no chronic disease

A small fraction of people age 85 and up have no chronic diseases. Zero.

These people have been called super seniors. They represent the top 1% in health for their age.

While 1% is a low number, it shows what’s possible. You can get older without falling victim to chronic disease.

Or, you can be like almost everyone else and look forward to a great deal of pain and suffering.

The number one cause of chronic disease

What’s the mysterious factor that leads to chronic diseases in the developed world, but leaves hunter-gatherers alone?

Processed food.
Specifically, foods that contain hefty amounts of seed oils, sugar, and refined grains. (See these links for citations.)

Humans are not genetically adapted to eating modern, ultra-processed foods. We’ve been around for hundreds of thousands of years, and our predecessors for millions. Yet agriculture began only about 10,000 years ago, and we began to eat ultra-processed food in large quantities only in the past few decades.

The diseases of civilization are better called the diseases of processed food.

When people living a traditional lifestyle begin to eat processed foods, their health declines and they get chronic diseases. This phenomenon has been seen over and over.

The rise of cheap fast food and other ultra-processed foods in the past few decades is arguably responsible for the obesity epidemic.

Despite what conventional health wisdom claims, animal foods have nothing to do with chronic diseases, including obesity. The main offenders are all plant-based foods: seed oils, sugar, and refined grains.

Americans ate huge amounts of meat in the 19th century and before, and didn’t have chronic diseases. So did many other people in many other nations.

“Heart-healthy” isn’t

Ever since the dawn of the cholesterol hypothesis of heart disease, animal products have been demonized.

They urged us to replace animal products with “healthy whole grains” and “heart-healthy” oils like corn oil.

As a consequence, obesity rates exploded.

They started an uncontrolled experiment on the American people, who never gave their consent. Even when they began, there were many dissenting voices, but of course they were ignored, or had their careers ruined.

Mainstream health authorities are being dragged, kicking and screaming, away from their dogma, but most will never admit that they’ve been wrong. If they do, it would mean taking responsibility for the horrible state of health of most Americans.

Another consequence is that most people now consider processed foods as healthy, or at least benign.

Processed foods now make up 70% of the American diet. The answer is staring us in the face.

If someone sees a doctor about a chronic illness, in all likelihood the doctor won’t advise lifestyle changes. Some do, but most don’t know what the right changes are.,

Instead, the doctor will prescribe drugs, which are often toxic or at best ineffective.

To reliably produce obesity, metabolic syndrome, and fatty liver in lab animals, just feed them processed food.

Other lifestyle factors

Certainly, other lifestyle factors are involved in chronic disease. Among the most important are:

-exercise
-sunshine
-circadian rhythms
-sleep
-social connection.

It’s difficult if not impossible to assign ranks of importance or the degree to which these things are responsible.

But I do argue that processed food is a huge factor, and if you stop eating it, you could make huge gains in health.

Eat whole, minimally processed food.

I have been dabbling with low carb diet for a while and would like to solicit some creative ways of getting around the selection of food and meals on a daily basis when you are out and about.

I'm don't go the extreme of cutting carbs all the way so I'll consider myself a lightweight social keto (?). However getting to know the keto theory has made me much more conscious of carbs consumption these days. Felt a spring in my everyday routine since and my face improved by leaps and bounds ! :s12:

Cooking and preparing LCHF for every meal is impractical due to work/time and other social reasons. So what are some of the creative ways that you get around when you are out and about ?

Today I went to Paik Bibim, ordered the pork bibimbap dish and avoided the rice altogether eating only the fresh veg and pork. It was very satisfying. There are probably hidden carbs (sugar) in the meat marinate and some grains of rice still slips into the veg but it's okay as I'm not too hardcore. Other things that I do:

Get 2-3 siew mai - there's the slight wanton skin wrap around it but I'm cool with it.

Ordering a big pau and cast away the thick white skin and just enjoy the meal and egg on the inside + steam pork ribs (both from dim sum stores)

Had kambing soup from the indian store, but I was reminded from another thread that it's probably way too high in calorie ?

Ready roasted Char siew and roast pork from the supermarket and consume it without rice as a meal.

Bought Tamagoyaki from Isetan !

Anymore ideas when you are out and about ?

Can we keep all this LCHF hocus pocus to that KPC thread?

Don’t need more people dying in 5-10 years’ time.

KPC's thread is too hardcore and has too much cooking involved ! I'm looking at some lightweight ideas for out and about ! :(

Also keto isn't meant to be long term solution. It can also be a short term detox.

KPC is welcome to contribute though as long as she/he(?) doesn't get aggressive and preachy !
