Why Ee-fu noodles (干烧伊面) only available during wedding and not in regular zichar, chinese restaurants menu?

Are there 2 types of Ee Fuu noodles? I heard that one of them does not contain eggs.

Ee-fu noodle during wedding dinner is actually higher grade noodles than those over-fried yi-mian. Different class actually.

Got two types. Ee mian and Ee fu mian.

Ee mian is made of wheat flour only whereas ee fu mian is made with wheat flour and eggs. And most zhi char stalls in coffeeshops have ee mian, cooked like hor fun style.

Some fish soup stalls also have ee mian.
