First thing first, what's your main use? As a plex server to stream? Or really for the NAS functions.
If you are only going to stream, can consider google workspace(previously g-suite). At 20 USD/month, you get unlimited storage and they auto transcode the videos for you to let you stream directly.
Alternatively, you may download the files(which are untouched) and play it from whatever device.
If you really doing it for the NAS functions, honestly, you don't really need ryzen 3200g. Since NAS will probably be on 24/7, you want something which sips as little power as possible. Not like our electricity here is cheap. Something like J5040-ITX will do.
