Stirred fried kangkong and sweet potatoes leaves are nice. Stirred fried lettuce is also not bad

Yellow cabbage, broccoli, stir fry with water lesser oil, salt & soya sauce for seasoning.

So many...

Brussel sprouts - roasted with carrots, bacon, walnuts/pecans and maple syrup, garlic powder, olive oil

Alfalfa sprouts - raw, with cherry tomatoes drizzle with olive oil and balsamic vinegar

Koji tatsoi - with noodle soup

Bitter gourd - with canned spare ribs and egg

Cabbage - either shredded with tonkatsu and tonkatsu sauce / soften like hainanese curry png style...

Celery - with shredded pork, pumpkin in Oyster sauce

Sichuan veg (slightly sour, and spicy)- in ABC soup

油麦菜 dunno wat to call in english... or those vegetables a bit "crunchy" type

Spinach - in a soup with egg 'flower' and salted egg cut into bits instead of adding salt.

Torn between this and kangkong. Decided on kangkong since the theme is vegetable and not fruit. I know these fruiting bodies are considered vegatables... but a choice had to made.
