If I want to build a rig that does not requires to be overclocked, would it be recommended to use a m-itx instead of atx?

Overclocking does not really equate to the size of your motherboard.

Several considerations:

1. Space constraints:
How much space do you have on your desk/away from your desk?

2. Future expandability (mobo options+casing):
How many gpu/hard drive you want to have in the future? How many GB of rams you want to expand?

3. Heat (more towards casing/fans):
Do you want your components to have more air to pass through them?

Performance difference for between mobos is negligible, esp where OC is not concerned. All in all go for long warranty and cheap options if not favourable of being bling etc.
