Pork lard how to make it taste like those meepok/ Hokkien mee stall

The pork lard that I bought from NTUC and slow heat to release the oil tasted horrible.

am I missing something out? Can any lard sexpert advice

Think some people will put abut of peppercorn and scallion while getting

But dont eat too much farmed lard. Very toxic. All the hormones, toxins and other chemicals all stored in the fats one.

Buy 1kg fresh lard from wet market. Cut into large cube then marinate with half teaspoon of salt and msg for at least 2 hours. Heat wok, throw in lard at medium heat, slowly stir and wait for all oil to release. Ready once the lard turn golden brown.

I am expert in this..

I cooked for myself since young as both my parents worked.
Cooked the pork lard as usual, make alot precooked and stored in container and store in fridge.
To use them, rinsed them over tap, and re-fried them.. and water content will make them very crispy.

Same technique work well for all battered food.. sweet-n-sour pork, popcorn chicken..
Water rinsing before frying is the trick for that crunchy skin.

Those hawker do their own pork rendering on the same wok that is used to cook the hokkien mee, and they only rinse/brush with water. It is very seasoned with flavour.

That's why when you do your own rendering at home with clean cookware, it is only pork flavour. And if you use those Indo pork, the gamey pork taste very strong
