Airbnb makes sense if a group wants to stay together instead of splitting up into 2-3 different hotel rooms. It is also slightly cheaper compared to hotels especially for bigger groups. If you don't need hotel amenities, Airbnb is a good alternative and lots of Airbnb actually have better locations compared to hotels. Some people also book Airbnbs for 2 pax maybe for location and probably washing machine. Price is not that different from hotels for 2pax and I'd definitely choose to stay in a hotel if I'm traveling as a pair.

Not sure what you mean by shops, shops at the airport? By the time you clear customs and get luggage it'll be 7am and most restaurants are open. I take Korean Air 3-4 times a year and they are ok. One thing is they don't turn on the AC and it gets pretty warm for long flights, so I changed back to taking SQ when I'm going back to SG (I'm based in KR).

Food is alright, usually a choice between a Korean and a western dish. Personally I'm not a big fan of in-flight food so I usually eat before my flight and skip in-flight meals if taking red eye flights

Yes staying at Seoul as its a short trip so not going elsewhere. Might be at Myeongdong for shopping & eating.

Not sure which area you're looking for but all these 3 are in Hongik University Station aka Hongdae

i personally also prefer hongdae. Not as expensive as other places but still very convenient to travel around seoul. The station has an airport line if im not wrong, so very easy to get there to/fro airport

Don't quite understand what you mean by take airport line to hotel. Hongdae is an interchange of Line 2 and airport line. So you can take the subway from Incheon/Gimpo airport and go straight to Hongdae. There's a newly built Holiday Inn Express at Exit 4, the rest of the hotels are mostly at Exit 1 and 9
