It is actually pretty easy to tell real from fake scallops if you are a regular consumer.
Mainly those in landlocked areas where seafood is not a regular menu item that get easy to cheat.
Good quality surimi imitations can get pretty close - down to the fibers btw.
Think premium imitation crabsticks vs the cheap stuff.

Haha. If the fellow doesn’t know how to cook scallop, the artificial one is actually a LOT more forgiving. I daresay most breaded scallop is fake. Scallop releases so much water when cooking that breading doesn’t work. When it comes out, you get a hollow shell and a shrunken meat inside. Or a soggy shell because the scallop dumps all the water out when resting on the plate after frying.

Scallops are quite expensive.. hence Chinese goods almost always sell them in this dried form so that you can use them as taste enhancer in cooking like soups, double boiled soup, or even stir fried... in fact.. you can take one of these and just chew on it.. it is naturally sweet and full of umami...

By the way, this class of scallops are the cheapest class around.... got high end one... but need to go to those special dried goods seller.

As in the vid, all deep fried scallops are fakes. Pan seared ones are the real deal
