My daughter has been using Sony ZV1, its pretty easy to use, but if you want zoom and all you should consider

Panasonic LUMIX TZ99 with Leica and 30x zoom for less than $700.

sounds like you just wanna point and shoot... .and you wan quality

most high end phones like ip pro max already more than enough and capable. many mid range phones are also able to take good decent phones

especially since you are travelling, you'd wanna carry as little as possible

If you have a kid and he/she is quite "problematic", not easy to use a better camera unless your wife is very understanding and willing to take care. I suggest not to buy any interchangeable lens camera.

When travelling it's just not possible to go near to a place to shoot every time. So having one with 40x optical zoom will greatly help you shoot from far
40x.. need to buy what kind of super stable tripod to stabilize it..?

Wanted to snap some photo of my kids for memories, so thought of buying a proper camera

I know some will say HP is good enough, but i just tot of getting something that can snap a better quality photo

any camera expert here to recommend? Mainly taking photo not much videoing
u may be surprised, "better quality" is subjective nowadays

many phones take multiple photos and combine them, even when u only tap once on shutter

the camera output can immediately be used for instagram/facebook/tiktok, etc.

what is your current phone, and what do you think is missing that you wish to complement with the camera?

then we can advice further

IMHO.
You are on the right track. Here are some tips.
a) doesn't keep easily so it will be forever handy e.g sling over neck, hand held.
b) single touch to turn on so that by the time it reaches your eyes to compose, it is ready
( hp still need finger print, activate app, etc my DSLR from body to eyes, single click ready )
c) do not get standard kit lens. get longer kit lens e.g. 18-140mm
d) get a fast 50mm lens for bokeh shots

IMO HP more suitable, easy to share & backup to cloud. xiaomi, honor, vivo, OnePlus u should be able to find one within your 1K budget

color profile maybe be slightly different so best u bring your kid & try out at retail shops to see which u prefer.

Get a proper video recorder.
Photographs, no matter how good, will lose in reminiscent value comapre to a lousy camcorder
