after partitioning how much space are you left with on each partition for other sw etc?

You can choose your partition size of your liking in disk utility. OS X takes around 20GB. Windows 7/8 will take round 20-30GB. You'll have access to both partition from either OS X or Windows so it's not necessary to split your memory equally.
