It’s more than enough to do what you are suggesting.

In fact don’t even need so powerful Mac to do so

Yes 8gb is more than fine for the above.
I am still using a base model M2 MacBook Air with 8gb ram now.

was using an M1 with 8gb memory.

macbook memory constantly at near 8gb with Teams and Outlook. for adequate experience.. best is 16gb.

I bought M2 Air 8GB, having same memory constantly near 8GB. I returned the MacBook Air and got M1 Pro 16GB instead

I used a MacBook Air M1 with 8GB RAM for mobile app dev before switching to a Mac mini M4. Honestly, for just browsing, videos, and Office, your setup might still be overkill.

I bought M2 Air 8GB, having same memory constantly near 8GB. I returned the MacBook Air and got M1 Pro 16GB instead

i think the apple store person isnt well-trained. she told me 8gb is sufficient for photoshop, davinci resolve as macbook knows how to optimize. Thankfully i didnt buy as i was still considering. endedup going with a CTO unit of 24gb ram
