Plenty of good food can be found in Georgetown, so don't stay at any beach or Gurney Drive.
With a young kid in tow, 4-6 hours is probably insufficient to visit places outside of Georgetown where you are disembarking. This rules out places like Penang Hill and Kek Lok See Temple. However, many of the places mentioned in http://wikitravel.org/en/Georgetown_(Malaysia) are within walking distance. These include the historical buildings like the Khoo Kongsi, Fort Cornwallis, temples and the E&O. Shopping malls like Pranglin Mall and Komtar are also within your range.

For me, the most central hotel for hitting most of these spots is Traders Hotel. Good food north, west, and south... and most importantly, near to the supper places. The rest are a short RM10 cab ride away. I just returned from a 4d3n trip there... and didn't manage to eat everything despite cramming in 6 full meals a day.
I used to take the taxi. Nowadays I take the rapid bus. Clean and aircon. All for the princely sum of RM2.70.taxi from Georgetown to Airport is 30rm.
