I guess it depends on how 陈 is pronounced in various dialects, and then the older generation who tried to improvise their system of "pinyin" spelt it as Chan if he was a Cantonese, and as Tan if he was a Hokkien. Only recently when the government made the Mandarin dialect the putonghua among ethnic Chinese, then we started to write "Chen"

Same goes for other surnames. For eg. 黄 is Wong for the Cantonese because this is how they say it, but Ng in another dialect, and of course Huang in the Mandarin dialect.

Yeap there’s some distinction on that website as it account for the different dialect groups

Yes I do have an interest in other subjects, like Chinese culture for example. That's why I'm in this thread to ask that noob question.

How to change? How can one change the surname?

you will be surprised historically chinese people change surnames like changing clothes..... and for all sort of reasons. adoption into relative family with different surname, to escape enemy pursue, adopting wife surname (usually more powerful and influential), changing to paymaster's surname etc...

23mofang, a dna genealogical company specialising in paternal (surname) ancestry researches, the average household has changed surnames avg 2-3 times the last 2000 years surnames came into common usage.
