Go for the i7. I have the i7 mini and is my main computer for general usage to video editing.

Definitely i7 if you're using for some specific work-related.
i3 for casual usage & to save extra money.

Surf net with chrome with 10 tabs, ms office and Netflix , will i5 and 8gb ram good for future proof?
Am undecided whether to replace my current MAC mini (2014) i5/8gb with the latest MAC mini or mbp 13” base model

The i5 is more than sufficient for everyday computing.

But pay attention attention to the amount of RAM, for all the applications, web browser tabs, and documents you want to have open. There was a time when 8GB was considered adequate. 16GB has become the new 8. You can upgraded the RAM yourself to lessen the cost.

Are you happy with your 2014 Mini? While you can't upgrade the RAM, you can switch in an SSD if you haven't already done so. That could push the performance further.

And do you require portability? If not, the Mini is cost effective for what you require. And you can hook it up to your preferred screen size.
