I have been meaning to upgrade my Ethernet wiring from CAT5 cables to 7 and install wall sockets to make life a bit easier. But I can only find CAT6 wall sockets. Will this affect the max bandwidth offered by CAT7 cables?

Yes. As with most standards, it will always max at the lower denomination. Therefore, even with real Cat 7 cable (knockoffs only Cat 5e/6 tbh), it will be capped at Cat 6 speeds.

Oh, if you're just using Gigabit router/ONT (Peak 1Gbps, subscription may be lower), even with Cat 7 you can't hit anywhere near the peak with direct connection. It will still be peaked at 1Gbps (Cat 5e/6/6a/7 all can meet).

Just get cat6A which can also do 10g to 100m. There are cat6A keystone jacks available in sim lim tower. I personally don't trust cat7 as there are a lot of substandard cables claiming to be cat7 around. Luckily for cat6A a lot of fakes end up as "cat6E".
