Depends on what you are interested in
There's 300 or more temples in CM for temple hopping
For outdoor activities there's Grand Canyon Waterpark and a few waterfalls
For shopping there's night market, Sunday Walking Street, and modern shopping centres

Sorry, can't advice on nightlife as I have not been to any of them.

One can embark on excursions to Pai and Doi Suthep. Within the old city walls, go on a trail to visit temples and even the women's prison where you can get a massage.

Sat night market, Sunday night market, Wat Doi Suthrep, night safari, trekking, elephant camp (look for those without riding).

You can hop to Chiang Rai (3-4 hours bus ride), go to the Myanmar town at Thai border town Mai Sae, go to Golden Triangle with museum showing the opium history of golden triangle. Make sure you go to Mai Sae and Golden Triangle in the same day early in the morning 8am-9am and finish by about 4pm so you spend less time traveling. Stay a night in Chiang Rai go to night market, Thai Massage at Chie Kaew massage for 200 baht and next day go back to Chiang Mai. You can also go trekking in Chiang Rai.

Cheaper probably. There are many agencies outside the Tha Phae Gate of the old city.

The old city is quite small. It's probably better to explore it by foot, bicycle, scooter (if you have motorbike licence), or just grab a songthaew for a few baht. I would use a day tour only if I'm very very short of time.

There's a night market/bazaar every night to the east (outside) of the old city.

There's a Saturday night market to the south (outside) of the old city, just beyond the moat.

There's a Sunday night market within the old city, from the East gate to Phra Singh temple.

The hotel staff would be able to tell you the location.
