Since we have windows defender it helps blocked virus and spy wares and hackers. But only some manage to get thru. Not 100% protect proof, right? So we need additional protection like eset, bitdefender to ward off remaining?

Why not 3 layers? What if your bitdefender cannot ward off all remaining? How about 4?

Windows Defender is decent enough for base-level protection, but it's not an all-encompassing solution.
The need for further layers also depends on the user(s) themselves -- for example, if you've people who are careless, like kids or others, you would want a more comprehensive solution that looks beyond virus and spyware and offers active protection such as scanning files, links, searches, etc.
