Does Cat8 Ethernet Cable work with old models?

Specifically, does cat 8 ethernet cable work on a TP Link Archer C7 & Motherboard EXGA X58 SLI LE models?

When we say CAT 5 6 7 8 or whatever it means it is the same cable format but each one can support higher speed x distance

This is probably a misconception thanks to CAT 7.

Because CAT 7 is an ISO standard that is not recognized by TIA.

CAT 8 is a TIA standard and aims to be backwards compatible to both CAT 7 ISO standard and CAT 6 and etc. TIA standard, by splitting into 8.1 and 8.2

The main issue is just the connector really. Although there is actually no rule saying you can't use TERA connector with CAT 6 or whatever also. (And if you've installed and crimped LAN cables before you would know that the connector is just a minor issue.) The newer connectors are needed to reliably support higher speeds, but if you see a CAT8 with 8P8C connector, then it better support CAT8 speed plus whatever speeds slower than that.
