You can buy any 14" or 15" laptop with dvd drive, and replace it.

go for the current ryzen thinkpads (e495/e595). has a 2.5" sata slot, and a m2 nvme slot

M.2 NVME/SATA + SATA
Usually these are on current laptops.

There's some Workstations with M.2 + 2x SATA.

Then there's laptop with 2x M.2 + SATA.

Aftershock laptop that I am helping my friend with have M.2 + SATA.

These are quite rare now, if you mean 2x 2.5 inch drives. As most consumers prefer lighter and slimmer case, the most you can find is a single 2.5 inch slot with 1 or 2 PCI-E drive slots where you can add SSDs to boost up the storage.

ThinkPad T series can support NVme plus SATA disk.
Some Acer model also support this way.
