U need to change the language to English (US) first and removed the secondary language, then the voice typing will not grey out as the Google support page note mentioned works for English (US) and certain languages. After enabling it, u can then change the English to whichever u like, add back the secondary language.
Getting the Assistant voice typing to work is a bit on-off for me, need to try a few times before it start listening and type out what I said..lol..

Tried changing all possible language to English (US) and only English (US). Still greyed out.

I changed the language in:

1) System settings
2) Gboard
3) Google Assistant Language
4) Voice within Google app settings
5) Search language within Google app settings

Maybe can try clearing the cache and get the beta for both apps

Day 5, (past 4 days have been around 4.5 -5hrs SOT with me charging the phone once a day to around 96% ish)

Took the p6p out for some intensive shootings + processing with my 2 kids this afternoon.

-left the house at 10.50am with 95% battery
-back home at 6pm ish batt at 32%
-did some processing and whatsapp strength reporting to the family chat and stuffs
-19% by 9pm with 3hrs 30min SOT
-to be fair, it was an intensive day
-optimally I wish the battery will be at 40% or at least 30%+
-reason being is that back in normal days if I am out for business trip with roaming (which is more battery intensive), the phone will likely die on me by slightly more than 1/2 day

Now to the imaging side:
-p6p is the king of HDR and scenery shots (especially those challenging contrasty scene)
-shutter speed/snappiness is great (more so than s21U & iPhone 12 pro) as I am surprised with the number of usable shots VS the action packed scenes of my 8 & 5 YOs in the MBA convention center kidztopia ballon castle
-'face unblur' is unfortunately automated with no ways to control, some photos just mentioned it was face unblurred... I supposed this contributed to the number of usable shots? IDK honestly as there is noway to control

-Video is pretty good imo and the cinematic pan is so smoooth (I am not video eccentric so not that particular but I felt that it is in the same league as iphone's)

-it needs some tuning on the close single human image side of things though, the contrast and lightings on a single face felt off (no issues with >1 or group shots)
(i am not using portrait mode as the cuttings/separations is wonky and the artificial bokeh is too fake for my likings while X70p+ 's is so good)

-in my opinion, if you can carry 2 phones for shootings in 2021,
(I mean vs a mirrorless camera & 2 to 3 lens. While the camera setup's prowess will totally thrash a phone's in the right hands, it will be way heavier and stop the photographer from joining in the fun) ,
go with:

1)Vivo X70p+
-king of portrait shots
-low lowlight shots
-stable lens-flare-less video

2)Pixel 6 pro
-scenery
-contrasty shots
-video is just as good and with better noise/wind cancellation mic

and you are all set to freeze and immortalize all those awesome moments!

Forgot to mention 1 more thing about p6p’s imaging:
-the feeling of over-processed are general more felt with pixel photos vs other phones
-especially on pet furs…
My fluffy pomsky looks a fair bit more matted lol, I have to ‘smoothen’ her photos to normalize.

But those scenic hdr shots are so good!

Akshay here from the Gboard team. As folks have pointed out, Assistant voice typing requires your phone to be on Wi-Fi for some time and all apps to be updated before the feature is downloaded and available.

If the feature is still not available to you ("Assistant voice typing" shows out as grayed out when you go to Gboard Settings -> Voice Typing), you can try the following to get it working:
Make sure that all of your apps are updated in the Play Store (especially Gboard, Google, and Android System Intelligence)
Ensure that Gboard, Assistant, and Android system are all in the same language and country
For Gboard: Go to Gboard Settings by long pressing the comma) → Languages
If you are typing in multiple languages, your primary language must match your Assistant language
For Assistant: “Hey Google, open Assistant settings” → All Settings → Languages
For System: Settings → Languages & input → Languages
Ensure that your device is on Wi-Fi for long enough to download the prerequisite data files and language packs
If necessary, re-open the keyboard and tap the microphone icon to force the download
Make sure that Gboard Settings (long press comma) -> Voice Typing -> Assistant voice typing is enabled
If you have a personal and a work profile on your Pixel 6, please note that at the moment Assistant voice typing is only available in personal apps.

TBH I don't think so - i came from a OP7T with big expectations over OOS as it's already near stock, but the only things that's impressed me so far is the camera (obviously) and the improved batt life. Using P6. Miss the dual-SIM functionality but I'll live with it.

Once you have Google Assistant Voice Typing enabled, you can switch everything back to English (Singapore)! I did this and the Google Assistant Voice Typing is still enabled.

Mine too. Average 7 - 8 hours sleep will drain around 10 to 12% too.. hmm...

Try GSAM or Accubattery to see if you can find the culprit?

Once you have Google Assistant Voice Typing enabled, you can switch everything back to English (Singapore)! I did this and the Google Assistant Voice Typing is still enabled.

Scratch this - Google Assistant Voice Typing silently greyed out again after I reverted to English (Singapore).
