i dont rmb pixel watch has features as restrictive like samsung watch (i.e health n spay).

AFAIK no restrictions. Unless you are on China Rom like me. Even so:
1) Sideloaded PixelWatch app onto my Android based Digital Audio Player (though it's abit finicky, sometime it say that the app crash)
2) Setup everything there including fitbit app.
3) Install fitbit on to my xiaomi 12S ultra since it can sync via cloud.
4) For notifications on my phone found this app called watchmate install on both 12S ultra and watch, it works the watch connects to my DAP and my 12s ultra(For the push notifications only)

I think the only restriction I face even for this very odd setup is I cannot add my bankcards onto my watch gpay. It keep giving error.

Other then that everything works, Sleep tracking etc.

Maybe the battery life suffered abit because it's constantly pinging 2 device instead of 1....

Probably only Pixel Camera control function of the watch since other android phone won't have Pixel Camera installed.

SPay is available on Galaxy watches paired with non-Galaxy phones though.

To me no. Unless you really a sports person it's too expensive otherwise. I will end mine after my free trial period end. Most basic tracking still works on the free app anyway, the premium just give you more details.

Bought 2 paid watchfaces. Very nice on the 45mm, but I notice the Heart rates on AOD are only updated on the official watch faces. Else is just shows the value before it fades into AOD mode.

Health sync can sync those data to google fit? Then u already have all the past data

Maybe someone can try sync from fitbit --> healthsync --> Samsung health and see if the data display well (Since google fit is lacking)

Certain things like steps can no longer be written into Samsung health. I used to use health sync the other way around to sync Google fit steps data to Samsung health for HPB healthy 365(Dunno why till now they still don't support Google fit). Then I change to sync into fitbit because of the limitations

Should be the same issue lol. Samsung health totally blocks the writing of steps into it. Only can read and write to another
