Meant for PC.

Should I go for Sony WH-1000XM3 or Corsair HS70 PRO WIRELESS Gaming ?

Totally totally different use cases.

The Sony is for outside or at work or on the train, listening to music. That's why it has noise canceling.

The Corsair is, as the name implies, for gaming. This means an emphasis on spatial surround, voice chat, etc. Not audio fidelity.

If it's just to listen to music, watch videos, etc, then the answer is: Neither of the 2.

I was in a similar dilemma and was researching between the Sony WH1000MX3 vs Sony CH700N vs Creative SXFI Air C.

Eventually I went with the CH700N as I do not intend to use this outdoors and the bulk of the expensive WH1000MX3 is its noise cancellation. Probably the best money can buy right now. If this is something you don't prioritise, then I feel the Sony CH700N is a very good headset. It supports APT X and APT X HD which is not available on even the Creative I was looking at.

The Sony CH700N also has support for wired if you need which is detachable. And I've tried it to watch movies on my phone over Bluetooth and am pretty damn impressed. Lip sync in movies is close to perfect and audio fidelity is impressive utilising APT X. A very noticeable improvement in sound quality compared to SBC and even AAC.
