Just think of it like bread, cake or cookies, mostly wheat, you could call them man made softened wheat

Lechitin, a plant (soybean/sunflower) derived product, is generally what is used. This is also sold as a food supplement btw. One target audience is lactating mothers. How safe do you think it is?

Modern milk is generally reconstituted milk. Whole milk is taken and centrifuged. Separated into constitutent components.
Liquid components are dried to give powdered fat and proteins.

These are then recombined in precise quantities to give a desired product. Skim milk. Low fat milk. Full cream milk. Also high tech nutritional compounds for infants and elderly/bedridden people alike. Some go into cosmetics and pharmaceuticals.

Talking about recombined milk… The components may not want to go back into suspension without a little help. That is where the emulsifier comes in.
