BEST SPRING ROLLS RECIPE!
Crispy spring rolls from handmade dough with coal slow cooked chicken meat that simply melts in your mouth! Even better with some simple sweet chili dipping!
Ingredients:
500g chicken legs
200g flour
100ml water
150g cabbage
1 red onion
few sage leaves
handful of parsley
3-5 garlic cloves
1 red chili
1 carrot
salt, pepper, oil
Dipping sauce:
1/4 cup light soy sauce
1 tsp. sesame oil
1 tsp. red chili, minced
1/2 tsp. honey
1 tsp lemon juice

Crispy coal baked puff pastry filled with easy homemade strawberry jam and amazing cream cheese!
Ingredients:
puff pastry, two 10x10 squares
1 free-range egg
1 cup of organic strawberries
1/2 cup homemade cream cheese
1/2 tbsp. honey
fresh balm = mint leaves

May be able to use the puff pastry in this 2nd dessert too

Hmmm I might be able to use my PAN cornmeal to make the base - see how...and simply use my Hershey's Cocoa & leftover Phoon Huat dark choc chips bah [the 'tempering' in the video is hilarious too] - the nuts are no problem as still got lots from my Xmas Baking !

Most probably will also drop by Phoon Huat for more dried cranberries heavy cream n cream cheese/coconut flour if available -strawberry mango ... before I start on yet another batch of desserts or spring rolls etc towards the weekend ....

I've got to check - think there are buses going there from Tampines too

Hi TS, read about the oxidised avocado..you could coat the avocado leftovers with olive oil to prevent oxidation :) somehow curious if the diet is overly filling due to its huge portions even though the diet doesnt include much carbo such as rice or potatoes?

True will see the scale at the +1 to 1+ kg mark when I overeat with the huge portions !
But since am doing IF n if I just eat my mom's dishes WITHOUT adding on mine too, can quite easily adjust n not put on more weight
- esp after having undergone those 3 weeks of much stricter LCHF with the works (daily CCO ACV etc) last Sep, feel I know my body n how better to control it for getting good Fasting Blood Glucose readings - just need to stop my "Sweet" Baking in May n be in stricter LCHF Mode to get good HbAc results in July
Actually I stayed within the OK Range even tho was doing a fair bit of Xmas Baking from Nov too - so I feel with my Intermittent Fasting IF n concerted awareness NOT to touch refined sugars as far as possible I should stay within the Healthy Blood reading levels henceforth !
1 possible "reason" for the Huge Servings is I don't want mom to say that she feels hungry in the middle of the night without her prized RICE in the meal - I want her to feel FULL on the healthier vegetables etc instead !

I should improve in my Estimation Skills to arrive at Just Nice Smaller Portions - don't really follow recipes to the letter as I do a fair bit of modifications ....

I didn't know that the Fresh Fruit place at Simei also carried Frozen Food n I bought some frozen seafood there !

My recent combined very small Toto winnings of $85 also insufficient for today's total grocery hoot from 3 places totalling ard $97 !

1st place was Farm to Table at Tg Pagar Centre - on my way to my body massage spa ... spent about $12 on :
1. $5 for 3 heads of broccoli
2. $4.88 on 4 Gold Squash (Mini)
3. $1.88 for Green n Red Capsicums
Resisted getting the $10 for 2 x 250g strawberries as feared them being over-ripe - learnt my lesson with the Marketplace too-ripe avocados !

Hv always wanted to cook with squash as found in many recipes
The avocados there were lovely n huge but very expensive - no offer on the avocados I saw today even at that Simei Fruit shop - still got 3 small ones in the fridge which I should be using in some spring roll or pastry wraps !

Then to Simei n spent about $35 on :
1. 200g Real Crab Leg meat (from China) $5 = much cheaper than Qoo10 offer of $20 for 454g - only difference is I will need to cook these as they are raw !
2. Imitation Crab Stick (from Thailand) 300g $5
3. 400g Cod Fillet $8.80
4. 300g Chum Salmon $5.10
5. Squid - flower cut. $5
6. Offer Egyptian Strawberries at 2 x 250g packs for $6 (1 pack at $3.50) [Other Egyptian brand 3 packs at 8 only] - I will be eating up the ripe strawberries tonight with my Greek Yoghurt n saving the rest for use in baking n salads etc ....

2. Now got 1kg Cream Cheese in a roll for only $9.40 !
3. Pampas Puff Pastry 10 sheets $7.70

6. 100g grated Parmesan $3
7. 125g Brie cheese $3.80
8. Small muffin tray $4.08

*** 1.9kg Sun dried Tomatoes in Olive Oil from Turkey - only $16.30 !!!

My dinner - told mom to tarpau Kuay Chap back as haven't had that for some time - we only go for the intestines n pork belly - I remember ordering all the 3 different types of intestines at that famous stall at the Old Airport Rd FC n it came to like $15 for 2 pax all in !

You're those lucky ones who dont have to worry much about weight and able to enjoy a variety of dishes :) And hope your next medical results will bear the fruits of your hard work. Ohh i can empathize your mom's late hunger esp. when our bodies are so used to regular rice consumption :lick:

Tks I know I should hv good readings since my food now mostly DON'T hv any or much processed refined sugars

After all I still fared well within limits then WITH my Xmas Baking when there were LOTS of Sugar n Flour n YOLO feasting ...
(I will try to use some natural sugar substitutes like Coco sugar or more brown sugar (if I hv to) rather than white sugar when possible too - I think all this helps)

I DID hv my problems with weight - was skinny then baby fat - then went on a serious regime n lost all fat gained during adolescence - stayed slim until my 30s when I re-gained some weight due mainly to tidbit snacking while studying another full time course at the U again .. then the usual Up & Down with the weight tho' never got back to really skinny-slim state again

I hv now reached the ripe old age where I am happy with my "still chubby tummy" but not obese body state n trying to go LCHF mainly for health reasons. Anyway ppl tell me I hv lost weight since more than a year ago - I think simply from my unconscious IF as I only started on LCHF since last Sep !

I don't take rice during lunch/dinner but mom continues with her rice at dinner except when I go Full Scale for dinner too for the Both of us ....I find that mom has a "loose stool problem" too whenever she takes a bit more fat such as CCO in her curries or pork bellies (also turmeric) etc ...so she has this natural resistance to going HF despite my telling her that it is healthy ! She said she had to run to the toilet 3x after yesterday's curry lunch n she was amazed that I was fine !
Slowly bah - at least she'll be switching to using CCO for cooking from the veg canola oil - told her CCO should help with the signs of her early dementia as getting awfully forgetful now recently
She almost forgot to add the taukee again in today's Waxed Duck Porridge if not for my timely reminder !

Dinner - finally the sorely-missed Bitter Gourd with "Sarm Lai Yee" a very boney fish with lots of fine bones (mom had to be hospitalised overnite etc etc many aeons ago at the A&E after a bone got stuck in her throat) +Veg Soup + my item - Squash is really refreshingly sweet

NTUC mostly like 3 for $4.95 but my last trip was selling at 3 for about $5.50 region

CS last trip was 2 or 3 SMALL ones for $4.99
While their larger ones going for at least $3 each !

Don't know whether that corner stall under a tent just outside OG at the old PP Complex still around or not - was offering 8 avocados at only $5 piles but mostly pretty ripe maybe mixed with 1 or 2 less ripe ones - n you can't select the nicer better ones for your "pile" too !

That Simei fruit shop - avocado prices were also around $5.50 for 3 !

Giant sometimes got cheaper offers but mostly over ripe n mushy already !!!

Mom's yummy Fried Beehoon - missed it as she has not been doing this previously Once Weekly item for some time already !
But she forgot to add in the prawns (with the canned mushroom, cabbage, egg, fishcake) which she had wanted to since the $5 prawns bought from the market came to quite a lot today n could apportion some here too - told her to fry the unused prawns meant here with the Broccoli I'd bought ..

Got to bring laptop in for endless repairs this afternoon - 3rd trip from beginning of 2017 ! Sighzzzzz
Dunno whether in time to do an item for Tea today after returning home ...
Thinking of the Baked Crab Poppers or the No Fuss Wanton Skin Berry Cream Cheese Tartlets or the Cream Cheese Bacon Bombs ...
Ooops must also do something with the 3 remaining small avocados before they turn mushy n over ripe too !

Didn't get home in ample time < after alighting from bus, popped over to my neighbourhood YES supermarket to look-see to get the canned corn needed for the Baked Crab Popper Delights,
3 Thai Honey Mangoes for $4 (chose unripe ones), more Spring Onions n Spring Roll Wrappers n 2-in-1 White Kopi (without added sugars), a sweet ripe Rock Melon or Cantaloupe half for $4 .....

Decided to get my own tea since already past Teatime - choice was either the Black Carrot Cake or Rojak - decided on the latter - Very Sinful n not LC as loaded with sugar but haven't eaten Rojak for a very long long time !

The Rojak Uncle used 2 chilli padi here - Wa - very hot - told him A Little Chilli but he's too old/deaf n not paying attention at all - saw that he cut the banana flower 3x too ??? I had to wait ages as he was too engrossed with something else even tho' I'd called out loudly to him - not aware that he got customer there !!!!!

Am going to do Prosciutto Melon tonight with some arugula on the side (those leaves already wilting as 2 weeks old....) - melon very ripe

Also got mom to cook less than 1 head [she said 1 full head too much for the 2 of us as she will only take a nominal 2 bites - of the 3 heads Broccoli I got for $5 from Farm to Table on Thurs] with the balance fresh Shiitake Mushrooms n this morning's unused Prawns - trying to encourage her to like Broccoli by saying that in the restaurants, broccoli topped with scallops/egg white or dried mushrooms (she said not enough soaking time here so can't use those tonight) make a classic dish on the menu etc .....

Will do my Crab-Avocado-Strawberry etc items tomorrow (just nice as mom won't be going to church tomorrow too) < want to also try Avocado with that Washoku.guide Sauce No. 1 for lunch in addition to the Avocado-Salsa Parcels - hope enough avocado to do both as the 3 remaining 2-3 week-long avocados are pretty small !
