Chatted wif fruit stall sellers and they said there was an over-supply of lychees tis yr. Hence have been seeing a lot of lychees around lately.

Din knw there are so many diff varieties of lychee. Recently hv been eating 妃子笑 and 糯米糍.

Got xtra lychees so tdy cooked a classic Putien Heng Hwa dish wif it.

Sauce is made wif dried hawthorn (山楂) instead of the common ketchup + vinegar

For marinating the pork, you can refer to my recipe for "lychee beer pork ribs" --> Lychee Beer Pork Ribs Recipe

For the sweet and sour sauce, first I make the hawthorn juice by cooking dried hawthorns wif water. Then simmer and add on other seasoning e.g. plum sauce, lemon juice, a bit of ketchup. Reduced the sauce over low heat then add in the fried pork meat and coat wif the sauce.
