How to remove songs from iPhone

Open the Music app. Go to the Songs section. Swipe left on the song you want to delete. The "Delete" option will appear on the right.

I noticed there's a few tracks with a cloud and down pointing arrow. These tracks can't seemed to be able to remove.
It was once bought from iTunes on another Idevice, but it was automatically synchronized between all devices as its under same iTunes acct

That is like a backup of your songs purchased in iTunes. If u dun have this song or app in your iPhone or iDevice then it is available for a re-download.

If you do not want that to appear, just go settings -> iTunes and App Store -> turn off show all music.

The cloud icon means you can download from the cloud but these in fact are not stored in your phone

I understand it is confusing I was just wondering the same thing a while ago
