1. Nope, you'll not lose them.
2. depends on luck. I don't think the one in the box might be jailbreak-able.
Just do a backup on your old iPhone through iTunes first. Then plug in your new iPhone and iTunes will guide you through.

Too bad , all new iphone come in at least ios 8.1.3 which the jailbreak is not yet ready
