Think he explains well the importance of having high mitochondria density and quality. By improving the quality and higher density of Mitochondria we can be burning fats more efficiently and clearing of lactate faster. This how exercise in zone 2 training makes us metabolic flexible. Improve insulin sensitivity too, hence protective against a lot of metabolic disease such as diabetes.
For long distance runner, it not only train our body to burn fats efficiently, but also clear lactate faster, coz mitochondria also use lactate to burn as energy. Mitochondria are found in higher density in slow twitch muscle, so long duration easy run it is. Ideally should run at just below LT1, but this point is not easy to find if you don't have a lactate meter or you don't know your steady state pace on flat ground.
