Knife set.. any chef here?

Gg bro. I used to play with ZDP189 and other supersteel knives. They are fscking hard to sharpen without a pro knife kit.
Literally hard haha. And the edge will fracture if you are like me and have bad knife technique.
ZDP189 is top of the line steel already.... any higher grade you got to go traditional Japanese hand forged honyaki carbon steel knife...

The last straw was when my aussie housemate borrowed the knife from my room and used it on the communal cutting board. The fscking GLASS cutting board. The highest HRC supersteel in the world is still much softer than plain old glass.

Doesn't take a genius to know that if I take the knife into my room, I don't intend to share it. He should have at least borrowed the nice hardwood cutting board it was sitting on to go with it.
That is a cardinal sin.... :sick:

There is no knife that won't blunt. Why you think butcher always got chopper on one hand and sharpening rod on the other.
And if you get knife that are too resistant to blunting then they will be brittle and prone to chipping.

rip. imo anything beside wood shouldn't be used as cutting board

by using an expensive knife, will the dish taste better???
It is a tool... cooking requires the use of a knife unless you are just heating up microwave food... then I would not call that cooking.

Just like I give you a lao kok kok Pentium PC with HDD from 20 years ago... you can still prepare word document and editing pictures on it... compared to a modern AMD PC with SSD and DDR5 RAM...

Both also can do.. but one will take freaking long to do it.. as opening a image file or bigger word document can take up more than 5 mins.. and yes just for opening it.. editing pictures from your handphone gonna lag like hell... but still can do it right.. but the person using it will not be happy using it lor.

Do you really want a frustrated and angry person to be cooking your food? :giggle:

Carbon steel knife will be a beast to handle for a casual user as they will rust and also if the user is used to using blunt knife before, carbon steel knife in such a person hand used to using force to cut will likely make the person slice his finger.

My mum used to blunt knife all her life and came my place and tried to use my knifes which are super sharp, sliced her hand quite badly lotsa blood and from then onwards dun dare to touch my knifes again.

Many people also treat bamboo board as wood but bamboo is damn hard.

Also get a end grain instead of cross grain board as end grain is much more gentle on knife

not chef, using a > 5 year knife set from zhang xiao quan. think they no longer selling on shopee / lazada already. personally prefer chinese knives especially the large general purpose cleaver knives (basically the ones they use for most of the stuff except chopping bones)

I think engraving can go to those place that does engraving for trophy... they can do it on knife.. but I think is more closer to laser etching bah...

Good knife?? I think you are better off visiting the knife shop, got 1 at Outram Tan Boon Liat... they can better show you.

I recommend a chef knife or santoku, and a nakiri knife for shredding vegetable. I use Shun but other brands above $200 should be fine.

taobao...but there are more smaller chinese brands.

But dun look at brands la...what steel they use

i just get my wife a vg10 petite thats all
she dun like to use 7" still sitting inside knife drawer.


TS u need to know whats the preference first , and what not.
The person knows/have capabilities how to sharpen
