If on day one I intend to go to Fushimi Inari Shrine and Gion and on day two Kinkaku-ji and Arashimaya Bamboo Forest, should I get the one day or two days Kyoto sightseeing bus & subway pass?

Dun think the pass is worth it for ur case.
U can put fushimi inari and arashiyama on the same day, then take train.
Then next day take bus from kinkakuji and gion using 1-day bus pass fto 500yen

Last time such pass is useful for me when bus cannot use IC Card.
Need to find coins etc

But then all Kyoto bus now can use those icoca/suica. No point in buying those pass, the saving if any is minimal. Add more headache in planning.

Should I get suica then?

SUICA can only get in Kanto area.
If you are going to Kansai area, get the ICOCA.

Load up 10k Yen inside, can last few days of transport and also convenience stores can use ICOCA as payment

If you plan to return to Japan in the future, keep the card as well
My suica use for so many trips

What is ICOCA? Like our ezlink?
I'll be spending a few days in Kyoto then heading to Osaka.

Yes. It is like our EZ link card.
Just that in Japan, different region got their own EZ link card. (Suica in Kanto, Icoca in Kansai etc)
Almost whole of Japan can use interchangeable (Suica can be used in Kansai, Icoca can be used in Kanto)
