if you enable lost mode then next time they on it, it should connect to network and automatically notify you... i think.

If you have Find My iPhone enabled(Activation Lock), it's impossible to bypass it even after restore and it's as good as a paperweight if you don't have the iCloud account to unlock it

Sad to lose it, even it can be cracked or bypassed, I think it's only can be sold for hw spares. To its owner, still a lost

I think it's more just the satisfaction of knowing that whoever stole it won't get much use out of it.

That being said if they are very sophisticated, they can still bypass it from what I've heard (although it's not for your everyday pickpocketer). or at the very least strip the key parts (eg screen) for spares like jq75 mentioned.
