Check a few things.

Take note when it goes blank. Does your chassis fan still spinning? Does your mobo CPU fan still spinning? Or does it totally everything blackout?

GPU overheating should be Screen black out. GPU fan may still be moving. But all the other CPU fans and chassis fan should be moving.

If it is the CPU overheating, then most probably all turned off.

Use HWMonitor also to take a look at the temps for both.

Use Prime95 to do a small stress test for the CPU.

If it shuts down then probably CPU overheated.

Use Furmark to stress test on GPU see what happen.

Hmm 1st hour only. Then i think possible that the mobo or the PSU issues already.

Got to look at SLS now.

Cause from what i know their stocks for Sandy/Ivy boards are reduced a lot.

Got to check on B75 chipset or something. But no overclocking. Got to see your budget also.

The game running in background, but not in active window right? ie. alt tabbed out to windows?
this isnt an accurate measure if your gpu is causing the problem.
please try and run Furmark for at least an hour to confirm that it is not the gpu problem

after playing 1 round of gunz2
u got any mobo to reco?
again 1 round isnt a really indicative measure to confirm it isnt GPU problem.

also you might want to check all your fans in the case because the Fan0 reading (~140RPM) seems kinda slow. is it a chipset fan?
