Need recommendation for new rigs

Hi guys, i need some recommendations for new rigs. Purpose, for mainly gaming and some content creation or streaming.

Rig1 Budget: $2800
CPU:
Mobo:
RAM:
1x M.2 SSD:
GPU:
24" Monitor:
Casing:
OS:

Rig2 Budget: $2500
CPU:
Mobo:
RAM:
1x M.2 SSD:
GPU:
PSU:
Casing:

I'm thinking if Ryzen 2700X would be the better choice for both gaming and streaming/rendering? The savings from 8700K over 2700X if used on better GPU should yield better gaming performance i suppose? If i'm not mistaken, there's no stock cooler with 8700K?

Also, is M.2 SSD worth it over Sata SSD? Is there noticeable performance gains if running OS and games on M.2 over Sata?

Edit: Also, how do i go about RAM timings if using Ryzen CPU? I know Ryzen performance is sensitive to memory timings, are there any setup required? Like turning on XMP in bios?

Since you are doing content creation/steaming in addition to gaming, Ryzen 2700x is more suited.
8700k has better single core performance but only very slightly, about 5-10 fps difference. 8700k comes with stock cooler but it's the cheapo intel stock one and 3rd party cooler is recommended. 2700x comes with wraith prism RGB cooler which is adequate.

M.2 is just the form factor. There's M.2 NVMe and M.2 SATA.
