When you do the system transfer, you can copy your game saves from Switch 1 to your new Switch 2. This will allow you to keep your progress while changing consoles. Looks like possible but how well it works you can try.
Moving your saves from Switch 1 to 2 is a one time thing. Most people expect the Switch 2 to completely replace Switch 1.

If you have Nintendo Switch Online subscription then yes, it has cloud save and will work for the vast majority of games (at least the 1st party). If you really want to be 100% sure, just google "Does [name of the game you are concerned with] support NSO cloud save" or something and you should have your answer.

True but I have more than 4 ppl who will be using the Switches, so will be good if we can seamlessly move from 1 Switch to the other.

Got my Lazada order from Nintendo Store this morning liao. No fuss and no need to wait hours in queue at Qisahn. . Kind of messy that they ask early pre-order customers to re-order on Shopee and wait for refund for original paid deposit.
