5600x is about $150 on amazon and 5600 is few dollars more, not sure why. While 5700x is about $200+, so kinda in between 5600x and 5700x, is it worth the $50 more?

on techyard, ryzen 5 5600 is $132, much better value than both of these. l3 cache stays the same at 32mb, slightly lower clockspeed and runs cooler.

I have an old PC running on ROG Strix B-350-F Gaming, with AMD Ryzen 7 1700, Ram DDR4 -3200 8GB x 2, display GTX 1060 6GB, PSU likely 650W, was thinking if should I just replace the processor only to run windows 11 as my current ryzen 7 1700 is not supported.

If yes, then which processor should I get and bios need to update to latest as well? PSU also need to upgrade?

Or maybe should just forget about running windows 11 on this old PC and wait until it dies off and save for a new one in future?
It's rare but you should try to get a 5600x3d or 5700x3d. Do update bios of your motherboard.

Judging by the 1060 I think you do some gaming.

You could do a little GPU upgrade later.

How much money are you saving by upgrading CPU and RAM vs buying a whole new box? Once you upgrade your old CPU and RAM will be useless, and your "new" machine may only stay alive for only so long with aging mobo capacitors and PSU.

Why not instead repurpose your old machine into a headless server? You could install UNRAID for example, and use it for backup or as a media server. The performance demands will be much lower, and you could stretch the use of your existing hardware for another 10 years or more maybe.

For your new machine you just need to add PSU, Mobo and a case. No need to worry about compatibility issues. Reuse your GPU until it eventually dies (which it will). You already have your display(s).
