When using gestures, any way to lock the phone without having to press the button on the side?

Previously with the 3 buttons, I can do a long press back button to lock the phone and I love it.

With the new software update, you can now double tap the screen to lock

I think that only works on the stock launcher. If you using other 3rd party launchers then you need to check if they have the option for gestures.

The only double tap I found was to wake the screen and tap again to off the screen.

There is no setting for it.. I think. I found out this function while going thru youtube for the tips and tricks.
I did the following on my handset;

Settings>Buttons>Navigation bar & gestures>Navigation gestures.
Settings>Gestures>Double tap to wake

After that, i juz double tap to wake or double tap to lock.
One thing to note, I'm on the stock launcher

i think its only for the locked screen, before you locked into the phone.

double tap to wake up screen, you would be able to double tap to lock screen (before log in to the phone)

I juz double tap anywhere on the screen to lock the phone..

Double tap to sleep only works on the stock launcher and it has to be on an empty space. You can't double tap on widgets or icons on the screen.

So if your homescreens are filled with icons and widgets, the double tap to sleep is quite useless actually.

Best way is to assign screen lock to long press on buttons, but that means you cannot use full screen gestures mode.

double-tap to lock screen has been added back in Open Beta 7, the stable OTA 5.1.1 does not have it.

Can. The navigation gesture includes one which goes to recents. You can use split screen from the recents page.
