My main usage is mainly to watch videos and online shows. No gaming at all

I will be using the laptop at home so won't be bringing it out

PS: I think the above 3 configurations are overkill if it's only for movies and online video. My suggestion is to either get a desktop+Tablet, or maybe a cheap cheap laptop + Tablet. So this case you won't need 1080p screen, as nowadays the 1080p screen is the major price difference for laptops.

lenovo s510p i5 4200u, 4gb ram, gt 740m, 15.6" 1366x768 @$899. last i saw it was at yewtee mini challenger.

Yes. Those are overkill. Actually an Core i series processor is more than enough for you.
can also consider Asus X550 @ $999 or Acer E1-772 17.3" i5-4200/4GB/500GB @ $799.
