i assume you are talking about the terminal in changi airport..
a large number of them are 24hours.

Depends. Boutiques have normal operational hours. Some food places are 24hrs, but not all. Bigger restaurants usually normal operating hours as well. Pharmacies and those duty free shops confirm 24 hrs though.

Best way to check is to go Changi airport website and get the information from there.
