Can share which folder is google map icon located in? And for apps downloaded from Appstore, which folder should i navigate to in order to change the icon?

Use AppInfo from Cydia and all shall be revealed

As for Google maps, the folder is called com.google.Maps and the icon is called AppIcon@2x.png. com.google.Maps should be in your Bundles folder of whichever theme you are using.
