Sleep and display off settings not available?

Does anyone know how to change sleep and display off settings separately?

previously there were 2 slider bars under energy saver but in el capitan there is only 1

i want to set display off to 1 min and sleep to 5min



alternatively can anyone tell me how to lock my macbook? (in windows its "windows + L")

i just want to be able to lock my mac with it still ON (not sleep)
