I only upgrade for my iPhone 7 Plus, iPhone 5s and iPad mini 4 which runs iOS 10.1, other devices with iOS 9.4 and below, I never upgrade and will never upgrade.

Not for me; so far iOS 10.2 has been working fine on my 6+.

Does the method of upgrade results in the different performance, some say ok but some seems seeing issue.
Could it be OTA vs iTunes method ?

it should be same performance with either OTA or via iTunes.

I have tried it with ip6 on ios9 and ios10. same results.

on my experience, phone starts to have a noticable lag when free space drops below 3GB.
