That's what I want to find out too. Those high end sushi place are they really that good? but at tsujiki, the difference for the sushi shouldn't be too big

Since all the shops in Tsujiki would get their fish from the market - should be the same. If anyone serves unfresh sushi in Tsujiki I'm sure they'd be all over tripadvisor :s13:

It is not so straightforward. Sushi Dai with their huge popularity is raking in a lot of money. They also consistently offer very competitively priced sushi. This combination allows them to buy the better tunas from the market, as well as provide a greater variety of sushis.

All the seafood products in tsukiji are sold thru auction. That is why some customers frequent a certain sushi shop as they know the owner can be relied on to get the best seafood from the tsukiji market.

the other big factor that determines how tasty nigiri (握り寿司)is more or less come from the rice selected and it's preparation will affect the taste of the sushi quite badly

then the actual act of putting the sushi together (unless you are talking abt machine made stuff) also affects the taste.

as for sashimi, there is slightly more to it then just "freshness" a good platter has to be well cut and will not have destroyed the texture of the fish which is what you want to enjoy alongside it's natural "sweetness"

(.__. ) talking abt this things like this makes me crave the stuff.... I am stopping
