So this is my current setup and plan. I'm not sure if its perfect, but if you do have any recommendation as to how i can shift my parts around, please do tell me!
I do know that Ryzen CPU are generally better for price/performance, but i've have to stick to intel to prevent any "waste" in my existing build as seen above!
MAIN RIG - > Monitor (3440x1440p @ 100hz)
CPU -> Need some recommendation on this, I normally won't bother about bottlenecks but recently came across this bottlenet website and have been checking it non stop. ITs very confusing, mixed feeling about this, is this really smth to be bothered about?

What would be ideal for 2070super?
GPU -> Picked GALAX GEFORCE® RTX 2070 SUPER EX GAMER mainly because of white theme, is 2080super worth the extra $$$?
RAM -> Recommend some rams, perhaps G.skill trident again or corsair RGB Pro.
SUB RIG ITX BUILD -> Monitor (1080p @ 144hz)
Decided to go for ITX build as there's a size constraint issue, but if its not worth to go for ITX, perhaps recommend me some ATX build?
Mobo -> Any recommendation for ITX mobo?
CPU COOLER -> Depending on the case recoommendation, what cooler do it need?
Case -> Any ITX case to reconmmend?
Both rig are mainly used for:
1. Gaming(Apex, GTA V, Monster Hunter etc),
2. Video editing 2-3min videos
Summary of what is needed to buy.
1. CPU - For Main Rig
2. GPU - For Main Rig
3. RAM - For Main Rig
4. ITX Mobo - for Sub Rig
5. Maybe cpu cooler? - For Sub Rig
6. ITX Case - For Sub Rig
Total Budget for all items: $1k-1.5k!
